LAST YEAR, The University of Plymouth won the prestigious Food & Drink category at the annual Green Gown Awards – the University Sector’s sustainability scheme.
As next year’s Awards open for entries, Executive Head Chef Darren Procter shares his thoughts on why you really should be ‘in it to win it’.
“Plymouth was redesigning its entire catering model, incorporating sustainability throughout as a critical area of focus. Everything from sourcing fish directly from local fishermen to the use of compostable disposables, we placed sustainability at the heart of every change we made.
“The team worked incredibly hard, and therefore winning the Green Gown Award was an absolutely fantastic moment. After all the hard work, it was a great end to a year of constant improvement. It endorsed our efforts and it’s been a great tool for shouting about our achievements, for engaging staff in the projects we're undertaking and to generate awareness across our campus and other universities. I’d definitely recommend entering to other members.”
