Footprint Forum: Water – Why Worry TWO in association with innocent

You couldn’t make it up….On the morning of the first Footprint Forum: Water – Why Worry? back in 2011, the Environment Secretary announced an official drought. In response, the then head of the National Farmers Union Sir Peter Kendall said “Let’s make sure we make food production a priority”. This not only shows how reliant British agriculture is on water but also, by default, highlights how fragile our global water system is; if food production is putting a strain on water resource domestically, just imagine what pressure the global population boom is doing to our eco-systems.
In the bigger picture, in some areas of intense agriculture or industrialisation the gap between supply and demand can be up to 50%. Water is the single biggest limiting factor in food and drink production. By 2015 we will need to allow for water for another 2.7 billion people. In the smaller picture, often overlooked is the water consumption not only in production and manufacturing but also the agronomic usage by foodservice and hospitality operators. Your business may be haemorrhaging water without you even realising.
The industry needs to wake up to the issues and make concrete plans to mitigate impact, no matter how far up or downstream in the supply chain your business is. Water is a public good to the global population, not a public right and our industry has a significant responsibility.
Footprint Forum: Water Why Worry? 2, in association with Innocent Drinks, will lay bare the scale of the global water scarcity, what part our industry plays and how likely it is to affect the foodservice and hospitality as a sector. We will be exploring the questions that need to be asked at all stages of value chains globally and domestically in the UK. Also, how we can understand our impact better. Footprint Forum will address exactly what you can do - whether producer, manufacturer or operator - to mitigate your own impacts.
